Though I do think it would be nice if the PF server browser showed both the name AND the IP address of a host (in format "Hostname.extension (10.1.1.1)") - that may be what some posters are looking for

I'm not sure I understand this request. I can connect via IP address - I can enter IPs manually AND they're remembered in the "recents" list. What's the problem that I'm missing here?

Having the possibility to reach a host given its IP may be mandatory in some situation. It's work more or less with the original Finder, it should be fine to have it too in PF5.

I recently noticed that it is impossible (on my machine anyway) to connect via IP, so how am I supposed to connect via VPN in PF5?

PF 4 remembered the IP adresses of used servers. PF 5 displays a less transparent Bonjour-like list of computer names. An option to swap between both formats would be much appreciated.
